My Eggy Tart




Egg tart is one of my favourite dessert or kuih. I remember buying it on my way to school from a chinese family bakery in Ipoh Town on Saturday. Well the shop was not as grand as today's bakery we can see with big signboard or neon lights. BUT the egg tart was so delicious that the shells were perfectly cooked, crispy yet crumbly. The filling were soft and wobbly that just melted in my mouth!

That was 15 years ago, today I couldn't eat from any other outlet except from Muslims. just can't anymore! Well as i grow older (??? do I mean it?) i tend to be more fussy of where i eat, what i eat... especially i' m feeding my kids too! I want to make sure all HALAL and toyiba only! So i go only to Muslim outlets.

Cream Caramel


This is Imran's favourite desserts. He could have it everyday. I made this (in the photo) when Shiera (Sharifah Shahira) and her family came over for BBQ. What a great celebrity she is. Nice and friendly, so down to earth. She's pretty too! Hope u had a wonderful time in my place at the BBQ dinner.

My husband has known Shiera for about 5 years I think, since he started his 1st TV show. At that time hubby had a segment called "Makan Apa Boss" in the family magazine program NTV7 'Famili Ria'. there were more than 150 episodes aired. Then he did 'Jemput Makan' with Shiera as well, then the latest was BBQ episode of 'Ala Carte'... well shiera n Ijoy it was a pleasure to have u that evening.

Recipe
5 large eggs
2 cups sugar
500 ml fresh milk
100 ml double cream
1/2 tsp vanilla essence

Caramelised 1 cup of sugar, pour in the mould.
Mixed eggs and the remaining sugar in large bowl. (Don't beat the poor eggs!)
Warm milk and cream in a pot, then pour in the eggs mixture, stir till the sugar dissolve. Pour in the mould.
Bake in the oven *(bain-marie method/water bath)

Happy Birthday Daliya!






Daliya was born on 3rd Dec 2003 while I was doing my MBA in Griffith University, Australia. She is shy to those new but when she got to know them, beware... she can gets really cheeky then.... she likes stories and doesn't eat much. She is always sweet to mummy and would always ask for things in the nicest manner. I love you Daliya. She did not want a present this year so DAD decided to buy her 2 new ESPRIT tops when the other bros and sis get only one.... HAPPY BIRTHDAY DALIYA!

I baked the cupcakes for her to share with friends in PREP P (P-purple) Purple is daliya's fav colour, lucky you to be in purple class too. So the cake background was purple with little flowers and fairies.... The topping is butter cream, and the words of cos from ready made icing... hahaha! Mr Chef had helped me to roll the icing and mould it and Ta raa.... that's wahat we got...( he's also the creative director there since i'm lack of it hahaha never like art class in school before and always cincai as long as i submitted them to teacher)....

Alhamdulillah... the Hari Raya is over now, my family managed to do a little Qurban, though not a bull or an ox but only a part of it... but still with that little contribution, I have seen more rewards from Allah. Trust me, you'll never be poor by giving in Allah's course instead you'll be 1000x richer with His blessing... i can see more rezeki is coming for my family Alhamdulillah

Planned to bake so and so for the Raya but instead I had only managed those above and some chocolate almonds cookies and a chocolate cake...

After the prayer, went to Abang Nordin's (hubby's boss) hse for makan raya, then we went to the park to celebrate Eid (makan lagi!) with other Malaysians family as pictured above. This is the small community of Malaysia truly Asian of Gold Coast...

Eidul Adha

The celebration is coming.... living in this western country, the day itself is not a public holiday... Dina is going to Q1 and Botanical Garden (school excursion), hubby has a seminar to attend... So there'll be just me and Imran (if he wanted to miss school, cause he's not the type..) and definitely Darwish...

Haven't got any plan yet for the day. I have to wait for my hubby to discuss it with the round table committee after Friday prayer today... members are of course the Malay husbands in Gold Coast... there's Capt Zahid, Dr. Khairuddin, Capt (R) Kamarul, Bro Wadi and me hubby....

The difinite plan is I'm gonna meke some kuih raya... Lists as below (planning only! not subjected to really make them... hahaha!)

1. Kuih semperit
2. Almond Squares
3. Chocolate almond cookies
4. Chocolate cake
5. Sesame cookies... hubby's favourite
6. Those are enough... murukku? yeah... wanna make murukku ubat nyamuk too...

Got to go shopping tomorrow to buy the ingredients...

Lil Sis Wedding next month


My baby sister is getting married next month on 19th Dec. It's sad sad i won't be coming to ur wedding sis... i m gonna miss all the excitement of having all family members together... sad,sad,sad... but its allright cos i'm giving in for my dearest husband..

Support him as much as he has always has... my best friend, my heart n soul and my love... next week is our wedding anniversary..11th years of marriage. but there is always new thing that we try out together making me feel like there is a never ending story of us... till death do us apart.. Saya sayang awak... I love you!

Easy Chocolate cake

Read my hubby's zine.. JAMIE (oliver), and found a very easy chocolate cake recipe. I have tried it (after wanting to try it from one day to another).. it has a very soft velvety texture that melted in my mouth. Just with 5 ingredients, you'll get an undeniably satisfied results. But don't get me wrong, THIS IS NOT MOIST CHOC CAKE ok... but still a delicious recipe.

Ingredients;
150g unsalted butter
200g dark chocolate
4 eggs
100g castor sugar
100g self raising four
(Wrote this without looking at the zine OK... how easy the recipe is!)

Method:
1. preheat oven at 180C (though the original recipe said 200c, my cake was a bit burnt on the top but still taste so good after scraping it! whuhuhu... so please adjust the temperature)
2. melt the butter and dark chocolate (cut butter into cubes), set aside the mixture to cool down.
3. add in the sifted flour into the choco-butter mixture.
4. place eggs and sugar in another bowl and beat for 5 minutes (it got really fluffy u know)
5. Fold the egg mixture into the choco-butter-flour until combined.
6. Bake in round 22cm tin for 25 minutes (the recipe said leave the middle part slightly undercook).

Even though this is not a perfect try, will definitely bake again this cake but at lower temperature so that its gonna be perfect next time.... so with the undercook part, why??? i think (without my formal education in cooking okey!... don't laugh if i were wrong and please correct me...) to retain the moisture in the cake, or else you might get it dry.... not tasty anymore!

Butter Cream Icing

I have always wanted to make delicious creamy icing myself to top on cakes or cupcakes. I have found a recipe that uses butter and icing sugar that has a very smooth texture. You know... most of the time home made icing is not really smooth as the shops' .... home made icing had been coarse that u can still feel the sugar granulesin your mouth eventhough u use icing sugar....

Why don't u try my icing recipe here... will guarantee you a smooth texture with real buttery taste.

150g butter @ room temperature
1 cup icing sugar.... add more if you want it sweet ( i prefer s'thing not so sweet)
1/2 cup hot water (this is the trick that dilutes the sugar granules)

How to make:
Beat the butter
Add in the icing sugar 1/3 at a time... continue to beat
Add in hot water a little at a time while beating until you reach the right consistency.
** Add food coloring for colors, essence for flavor.
My Favourite is choc hazelnut flavor from nutella.

Chocolate Chips Muffins

Its 10.28pm now.... yesterday i felt like eating butter cake.... went to look for the ingredients and found everything needed. Then my princess Dina came to the kitchen saw that i was preparing to bake he called my hubby to record... not me but her. she wanted to bake and recorded... we went along with her... she really enjoyed her baking and the recording.

Then later at night I saw my hubby giving out a muffins recipe to his student, simple and easy and again I felt like baking them... went back to the kitchen and baked again... yummm!!! the muffins were really easy to make and delicious. I think everyone out there should try to make them. Will post the pics later... having trouble downloading the pics from camera because my hard disc is almost full! huhue thanks for having a good camera though....

Thanks luv for the recipe and the opportunity to let me have a break from work... Allah permits everything good that we ask for... I had wished that if I could give more time to the kids, i got it when you wished to do the PhD... Alhamdulillah.

mum n dad creation





Wowee.... it has been a while.... since darwish birthday.... we celebrated quietly amongst us... me, husband, birthday boy, imran, dina and daliya...

baked the cake the night before and decorated the cake on the birthday afternoon, celebrated Darwish's birthday at night... look at the cake's deco... did that with my hubby... we giggled at how stiffed our hands were... but it came out allrite i think.... hahaha. well this is at least something my lill Darwish could remember when he grew up... mum baked my birthday cake... dad helped mum to decorate the cake... he could tell that to his friends later.... WOW!

overall we had a good time that nite... but i wasn't happy with the moist cake i made.. not so moist... but will keep looking for a good one and share it with others out there... TATA~

Darwish birthday


It's Darwish birthday today. He asked for a chocolate cake... so i've baked the cake last night (at 10.30 pm) with his help... he likes to help around in the kitchen especially when i'm baking... he always wants to help with the dishes... so sometimes i let him help with the dishes thinking that when he grew up he'll be the kind of man that helps around the house... just like his dad!

Yeah about the cake... this is a new recipe from chef Farid's blog. Its the moist chocolate cake.... will review the cake taste later... decorating will be done later with my dear achik (hubby and best friend)... awish wants a star on the deco... i'm thinking of using the white chocolate to make the star.....! hehehe hope it's coming out fine!

What ever it is.... HAPPY Birthday darwish... 4 years old.... my baby is a big boy now... I love u!

Melting chocolate techniques... EASY!

it looks difficult to do when you use the double boiler method... make sure the water doesn't touch the top bowl... don't boil the water.... bla bla bla....

my easiest way to do is to use the microwave...
set the power to lo/defrost mode....
use ceramic/glass bowl...
for 100g of chocolate my microwave requires 4 mins. make sure to stir from time to time...
the time depends on microwaves to... because of the power level... 1600w, 1800w so just check ur choc from time to time...

use ceramic bowl because plastic would take more time as ceramic retains heat so the the melting process takes lesser time.... I can assure u this is the best technique... less equipment, less to wash, less hassle....

Delicious butter cake... Easy peasy!


Why not try this Delicious butter cake that is easy to make. The same recipe could be use to make cupcakes too!

250 g butter
1.5 cup sugar
4 large eggs
3 cup self raising flour
1 tspoon vanilla essence
1 cup fresh milk

(Mix in an electric food processor or electric mixer)I use the electric food processor!

Cream butter and sugar
Add in the egg one by one
Add in the vanilla essence
Add in the flour and milk alternately, 1/3 of each at a time.
Bake at 180 degree Celcius for 15-20 minutes
Makes 24 cup cakes

Samperit for Hari Raya





Hari Raya 2008 marked the most memorable one in the history of Yati Rahman's Baking!
That was the fist time ever... she "Yati Rahman"... me... bake my own kuih raya for the family... since there is no kuih tunjuk in here... well u can just go to Wollie's to get the cookies... but the spirit is not the same! :(....

So for this Raya I baked samperit... my favourite. with the kids around to help me.... they had fun for a while... Darwish and Daya helped to eat the dough as well so mum finish faster ;D.... then they just left me alone to finish the samperit....
Since Imran & Dina were fasting, they couldn't taste them.

Later after the break, they all enjoyed the samperit with reminder from mummy.... don't finish em... we have to keep some for hari raya!
Really enjoyed making the cookies!

Hazelnut butter cake....




I made the hazelnut butter cake.... delicious! Just add in some nutella with 1/3 of the butter cake mixture... there you'll get the chocolaty hazelnut taste....
But i guess i still need to perfect my mixing art.... just to make it looks better next time....

White chocolate ganache...


Lepas dh boleh buat cake... blajar buat topping plak!.... White choc ganache....
buat utk mkn2 potluck with fellow friends kt sini.

White/Dark/Milk chocolate Ganache Recipe
• 300ml thick cream
• 150g good-quality dark/white chocolate, roughly chopped

Heat cream and chocolate over low heat, and stir until melted. Chill for about 15 minutes, until thickened but still a little soft. Beat with electric mixer. Spread over cake.

Chocolate Volcano





Next... tried the chocolate volcano.... yummy! memang best!

Tak Pandai Ler...



Tak pandai ler..... itulah jawapannya bila orang tanya, pandai buat kek tak? Tapi itu dululah pasal cuba sekali dua tapi tak menjadi... yelah mana ada orang belajar berjalan sekali pastu terus boleh berlari.... begitulah ibaratnya!

Setelah kali kedua merantau ke Gold Coast (dah thn ke2 kt sini)... kali ini jadi surirumah... cuba-cuba cari resepi kt internet untuk buat cupcakes.... tup2 jadi ler plak.... punyalah seronok.... tulah KALAU TAK DIPECAHKAN RUYUNG, MANAKAN DAPAT SAGUNYA!

You never know what you can do until you try it. I always thought i am bad at baking but just until recently (not so recent actually, 1yr ago! hahaha) i started to test my baking skill again. Started with cup cakes recipe.... Yeay... i made it! Wow, that was it, I never look back... trust my capabilities and keep on trying... never give up, take notes on the mistakes you made don't repeat them.
